Winter’s Warmth Hearty Vegetable & Bean Soup

Ingredients:
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, diced
3 celery stalks, diced
1 bell pepper, chopped
1 can (14 oz) diced tomatoes
1 can (15 oz) cannellini beans, drained and rinsed
6 cups vegetable or chicken broth
2 tbsp Winter’s Warmth seasoning
1 tsp smoked paprika (optional)
Salt and pepper to taste
Fresh parsley or thyme for garnish
Directions:
Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, celery, and bell pepper. Sauté until softened, about 7-8 minutes.
Stir in Winter’s Warmth seasoning and smoked paprika; cook for 1 minute to release aromas.
Add diced tomatoes, beans, and broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
Taste and adjust salt and pepper as needed.
