Grilled Pork with Fall Feast Seasoning & Roasted Autumn Veggies

Celebrate the flavors of the season with tender grilled pork rubbed in your Fall Feast seasoning, paired with roasted veggies that bring all the cozy autumn vibes.
Ingredients:
2 lbs pork loin or pork chops
2–3 tbsp Fall Feast seasoning
2 tbsp olive oil
4 small sweet potatoes, sliced into thick rounds
3 bell peppers (red, orange, or yellow), quartered
1 small butternut squash, peeled and cubed
1 red onion, sliced thick
Salt and pepper to taste
Fresh thyme or rosemary sprigs for garnish
Directions:
Pat pork dry and rub evenly with 1 tbsp olive oil. Generously coat pork with Fall Feast seasoning on all sides.
Toss sweet potatoes, bell peppers, butternut squash, and red onion with remaining olive oil, salt, and pepper.
Preheat grill to medium-high heat.
Grill pork 6–8 minutes per side or until internal temperature reaches 145°F (63°C). Remove and let rest 5 minutes.
Roast or grill the veggies separately until tender and slightly charred — about 15–20 minutes.
Slice pork and serve with roasted veggies. Garnish with fresh thyme or rosemary.
