Great Lakes Blend Pork Loin with Roasted Red Potatoes

Ingredients:
2 to 3 lb pork loin roast
2 tbsp Great Lakes Blend seasoning
2 tbsp olive oil, divided
1.5 lbs red potatoes, quartered
3 cloves garlic, minced
1 tsp dried rosemary or fresh, chopped
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Preheat oven to 400°F (200°C).
Pat pork loin dry and rub evenly with 1 tbsp olive oil. Generously coat with Great Lakes Blend seasoning on all sides.
In a bowl, toss red potatoes with remaining olive oil, garlic, rosemary, salt, pepper, and a pinch of Great Lakes Blend seasoning.
Place pork loin in a roasting pan or oven-safe skillet. Arrange potatoes around the pork.
Roast for 45–60 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and potatoes are tender and golden.
Remove pork and potatoes from oven; let pork rest for 10 minutes before slicing.
Garnish with fresh parsley and serve.
